Tait Farm Tacos
We love tacos! They are so festive and delicious, even for a simple Monday night dinner. It is a perfect way to use up some leftovers and you can load them with all your favorite things, like a protein, beans, cheese, lettuce, coleslaw, tomatoes, avocado, cilantro … and top it all off with Tomato Vinaigrette
For 12 tacos
1.2 lb. protein (fish - firm, chicken, beef, pork, tofu, or portobello mushrooms)
12 tortillas – corn or flour
2 C. lettuce mix or coleslaw
1 C. chopped tomatoes
1 avocado – sliced
chopped cilantro
grated cheese (optional)
Tomato Vinaigrette
Slice preferred protein, lightly dust with your favorite dry rub (like chili lime or fajita), heat a skillet, add a very small amount of oil and pan sear until golden brown and cooked through. In the meantime, place tortillas in the over to warm at 300 degrees. (If using fresh corn tortillas, brush very lightly with oil.) Place all the fixings out, fill the tortillas with the pan-seared protein, and let everyone create their own tacos!
