Tomato Quinoa Salad

This quinoa salad is hearty and versatile. Our recipe outlines our favorite recommendations but you can make it with the quinoa and colorful vegetables of your choice enhanced with our tangy Tomato Vinaigrette.

Salad Ingredients:

1 1/2 C. dry rainbow quinoa

Chopped lettuce greens

1 can garbanzo beans, rinsed and drained (black beans or pinto beans may be used instead)

1/2 C. chopped fresh cilantro

1 pint cherry tomatoes, halved or quartered

Tomato Vinaigrette

Optional: sliced scallions, diced avocados

Cook the quinoa according to the instructions and cool. Combine quinoa with other ingredients. Liberally drizzle with the Tomato Vinaigrette. Stir well to combine all ingredients.

Serves 6-8.
