Middle Eastern Tabbouleh Salad
The name tabbouleh comes from the Arabic word 'taabil' which means to season or spice. Tabbouleh is thought to have first been eaten in the mountains of Lebanon and Syria more than 4000 years ago.
Salad Ingredients:
4 C. bulgur
4 C. total vegetables, we like garbanzos, cucumber, tomatoes
½ C. chopped parsley and mint
½ C. Garlic Vinaigrette
Prepare the bulgur according to the instructions. Allow it to cool. Then, combine all ingredients and serve right away or several hours later.
SERVES: 6 - 8
