Savory Fruit Sauces
Basic Recipe:
1 jar Tait Farm Jam or Conserve
3 Tbs. butter
1/2 C. chopped onions
1 clove garlic, minced
3 Tbs. “spirits”
2 Tbs. chopped fresh herbs
salt and pepper
Melt butter in a pan over medium heat. Add onions and sauté until wilted. Add garlic and stir until fragrant. Add chosen spirits to deglaze pan. Add jam/conserve and stir until sauce comes together and thickens slightly. Add salt and pepper to taste, then add fresh herbs.
For deeper flavor, reuse pan meat was browned in.

Fig & Honey Conserve + red wine + thyme + pork/poultry
Raspberry Jam + 3 Chipotle Chilis in Adobo, diced + tequila + cilantro + pulled pork/chicken/beef
