SEASONAL SALADS WITH FRUIT BUTTER Vinaigrette

These seasonal salad combinations, tossed with our fruit butter vinaigrettes, are wholesome and oh-so-yummy!

INGREDIENTS:

½ C. Tait Farm Fruit Butter

2 Tbs. apple cider vinegar

½ tsp. salt

¼ tsp. freshly ground black pepper

½ C. oil (avocado, canola, olive, or sunflower)

DIRECTIONS:

Whisk together all ingredients until well combined.

Favorite Combinations: 

Pumpkin Butter Vinaigrette: lentils or black beans, roasted butternut squash or sweet potatoes, kale, pumpkin seeds

Apple Butter Vinaigrette: bulgur, fresh diced apples, spinach, raisins, walnuts

Pear Butter Vinaigrette: red quinoa, spinach or arugula, sliced pears, dried figs, pecans

Apricot Butter Vinaigrette: couscous, chick peas, dried apricots, dried cranberries, pistachios, parsley

DIRECTIONS:

Assemble ingredients and gently toss with ¼ C. vinaigrette. Drizzle more vinaigrette over top and sprinkle with nuts and chopped herbs. Garnish with sliced fruit and greens around the sides of a bowl or platter. Serve immediately.
