Berry Meringue Parfaits

INGREDIENTS:

  • Meringue cookies - store-bought or homemade**

  • Heavy whipping cream

  • 1 tsp. vanilla

  • Fresh berries

  • Tait Farm Dark Fruit Chocolate Sauce of choice

  • Optional: Shaved almond topping

Coarsely crumble the meringues. Whip the cream until it forms soft peaks. Add the vanilla.

In pretty glasses; alternate layers of crumbled meringues, whipped cream and berries. Drizzle with chocolate sauce and garnish with berries and almonds.

*Best when assembled and served within a few hours

Recipe: Homemade Meringue Cookies**

  • 3 egg whites

  • 3/4 cup of sugar

  • 1/2 tsp. salt

  • 1/4 tsp. cream of tartar (or lemon juice or white vinegar)

  • 1 tsp. vanilla

Line a large baking sheet with parchment paper. Preheat the oven to 250 degrees. Add the egg whites, salt, cream of tartar and vanilla in a bowl. Beat until egg whites are stiff. Gradually add the sugar a tablespoon at a time, continuing to beat until very stiff and glossy. Spoon or pipe the mixture into 12 mounds. Bake for 25 - 35 minutes until crisp. Cool.
