Fresh Vegetable Dips

INGREDIENTS:
1 Cup of cooked vegetables
1 Tbs. mayonnaise
3 Tbs. Tait Farm Vinaigrette
Fresh herbs
Salt and pepper to taste

Combine all ingredients in a food processor.
Pulse/puree until well blended. Serve with crackers or pita chips.

Favorite combinations:
Peas: Lemon Vinaigrette + 1 Tbs. fresh mint or chives
Carrots: Honey Mustard Vinaigrette + 1 tsp. ground cumin + pinch of cayenne
Asparagus: Garlic Vinaigrette + 1 Tbs. chives
Roasted red pepper: Herbal Balsamic Vinaigrette + 1 tsp. fresh rosemary
Beets: Garlic Vinaigrette + 1 tsp. ground coriander + grated orange zest
Green Beans: Garlic or Lemon Vinaigrette + 1 Tbs. fresh dill
