Potato Salad

Everyone’s favorite picnic food made four delicious ways depending on your choice of Tait Farm Vinaigrette.

Garlic Vinaigrette Variation:
  • 2 lbs. boiled thin skinned potatoes
  • When cool add: 1 C. chopped celery + 1/2 C. mixed fresh herbs
  • Dressing: 1/4 cup mayonnaise + 2 Tbs. Garlic Vinaigrette
  • Salt and pepper to taste
Honey Mustard Vinaigrette Variation:
  • 1 ½ lbs. baby potatoes, boiled
  • While still warm add: 1/2 C. chopped onion + 2 Tbs. capers + 1/2 C. chopped parsley + 6 slices of bacon crumbled
  • Dressing: 1/3+ C. Honey Mustard Vinaigrette
  • Salt and pepper to taste
Lemon Vinaigrette Variation:
  • 2 lbs. potatoes, boiled
  • While still warm add: 1/4 C. chopped parsley + 1/4 C. sliced scallions + 2 Tbs. chopped dill
  • Dressing: 1/3+ C. Lemon Vinaigrette
  • Salt and pepper to taste
Herbal Balsamic Vinaigrette Variation:
  • 1 ½ lbs. oven roasted baby red potatoes
  • When cool add: 1/4 C. chopped parsley + 1/4 C. sliced scallions + 1/4 C. chopped arugula
  • Dressing: 1/3 C.+ Herbal Balsamic Vinaigrette
