
Black Bean Fusion Salad
A zesty and flavorful salad that’s simple to make. Great as a side dish or light lunch.
SALAD INGREDIENTS:
2 C. cooked black beans, rinsed and drained
2 ears of corn, boiled and scraped
2 C. diced fresh garden tomatoes
1 avocado, diced
1/2 C. fresh cilantro or parsley, chopped
DRESSING INGREDIENTS:
1 jar of Tait Farm Mango or Ginger Peach Chutney
6 Tbs. oil (canola, sunflower or olive)
Juice and grated rind of one lime
Salt to taste
DIRECTIONS:
Combine all ingredients and chill.
Serves 8
