Asian-Inspired Tuna Salad
INGREDIENTS:
1 6 oz can of water-packed albacore tuna
1/4 C. scallions, diced
1/4 C. Ginger Mustard
2 Tbs. light mayonnaise or non-fat yogurt
Salt and pepper
Cucumber slices
Sandwich bread (any variety)
Combine tuna, scallions, mustard, mayo/yogurt, salt, and pepper and refrigerate.
Top bread with cucumber slices and spread tuna salad on top. Top with additional bread slice.
For a fun appetizer or snack, place a slice of cucumber topped with Ginger Mustard Tuna Salad on a sesame or rice cracker.
